Muffin Ingredients
1⅓ cup [85ml] all-purpose flour.
½ cup [125ml] unsweetened cocoa powder.
1½ tsp [7½ml] baking powder.
1½ tsp [7½ml] baking soda.
2 tsp [5ml] salt.
¾ [190ml] cup packed dark brown sugar.
¼ cup [62.5ml] cinnamon apple sauce.
1 egg.
1 egg white.
1 tbsp [15ml] oil.
1 tsp [5ml] vanilla extract.
⅔ cup [165ml] skimmed milk
powdered sugar, optional
Making the low fat chocolate muffins
Preheat the oven to 350° F [180°C
Line 12 muffin cups with paper liners.
Combine the flour, cocoa, baking powder, soda and salt
Beat the dark brown sugar, cinnamon apple sauce, egg, egg white, oil and vanilla extract until combined.
Stir in the flour/cocoa mixture and alternate with milk until just combined.
Pour the batter into muffin cups and bake for 22 to 25 minutes or until toothpick comes out clean.
Remove the cupcakes from pan; cool on a wire rack for 30 minutes.
Sprinkle Your Low Fat Cocolate Muffins with powdered sugar if desired
