This
diabetic friendly recipe for a creamy asparagus soup is easy to make and well worth the effort. I'm sure you'll agree once you taste it!
Recipe Ingredients
2 cups potatoes
½ pound fresh asparagus
½ cup onion
2 stalks celery
4 cups water
2 tablespoons butter
½ cup whole-wheat (whole-meal) flour
1½ cups fat-free milk
Lemon zest, to taste
Cracked black pepper, to taste
To make the SOUP
Peel and dice the potatoes
Cut the asparagus into ¼ inch [⅔cm]pieces
Chop the onion and celery
Combine the potatoes, asparagus, onions, celery and water in a large soup pot and place over high heat
Bring to a rolling boil.
Reduce the heat, until the mixture is just simmering.
Place lid on pot and simmer until the vegetables are tender, this will take about 15 minutes.
Stir in the butter.
Whisk the flour and milk together in a small bowl.
Pour the flour and milk mixture slowly into the soup pot, stirring constantly.
Increase the heat to medium high and continue to stir until the soup thickens, about 5 minutes.
Remove the soup from heat.
Season the creamy asparagus soup with lemon zest and cracked black pepper to taste.
Serve in 6 soup bowls, which have preferably been warmed.
