This is a very easy
diabetic friendly recipe for a tasty light meal of baked zucchini stuffed with ham and cheese
Ingredients
Non-Stick cooking spray
4 small zucchini
2 cups finely chopped low-fat ham
1 egg
1/2 teaspoon basil
1/4 cup green pepper, chopped
1/4 cup low-fat Swiss cheese, shredded
2 tsp canola oil
To Make the Stuffed Zucchini
Preheat oven to 325
oF [160
oC]
Cut off the ends of the zucchini with a sharp knife, and hollow out the inside, removing the pulp.
Lightly beat the egg, in a mixing bowl, the add the ham, egg, basil, green pepper and cheese, stirring to combine well
Using your fingers or a teaspoon, pack 1/2 cup of this mixture into each zucchini.
Place the zucchini in a baking dish coated with non-stick cooking spray.
Brush the stuffed zucchini with oil.
Bake for 45 minutes. The zucchini will be fork-tender.
As a light meal, these
cheese and ham stuffed zucchini should go down well with everyone
