This Indian Recipe makes a deliciously spicy Okra dish which is yet another way to enjoy this vastly underrated vegetable
Ingredients:1 lb [ 450g ] okra
oil for shallow fry 2 tsp red chili powder 1tsp cumin powder 1½ tsp coriander powder salt to taste 2 tsp lemon juice Making Stuffed OkraCut off both ends of the okra.Using a sharp knife cut a small pouch in the longside of each okra. Do this carefully so that the slit does not go right through the okra and both the ends are closed, otherwise the stuffing will fall out. Make the stuffing by mixing all the chili, cumin, coriander and tumeric with the lemon juice. This should form a thick paste, if the stuffing is runny it will come out of the okra during cooking Carefully stuff the paste inside the pouch of each okra. Heat the oil in a fryingpan and shallow fry the stuffed okras on medium heat. Fry a few stuffed okras at a time turning them occasionally untill they are crisp on all sides.
