Okra Recipes
OKRA RELISH FROM ZANZIBAR

This Okra Relish is from the African Spice Island of Zanzibar

Ingredients:

14oz [400g] onions
4 tbsp oil
4 garlic cloves
2 hot chilis
2½ inch [6cm] piece fresh ginger,
4lb [1.8kg] fresh okra
2 fresh tomatoes

To Make The Okra Relish

Slice 7oz [200g] of the onions and chop the remaining 7oz [200g]
Chop the Garlic cloves and the chilis
Grate the fresh ginger
Trim the ends of the okra and cut them into approximately 1inch {2.5cm] slices
Cut the tomatoes into thin strips

Heat oil in a large frying pan [skillet] and fry the sliced onion in this until brown.

Add the chopped onion, garlic, chilli and ginger and fry for 1 minute.

Add the okra and fry for about 10 minutes.

Add the sliced tomato and fry for a further 5 minutes.

Pack the hot okra relish into 2 [depending on the size] jars, which you have sterilized.

Seal according to the best practice of bottling preserved vegetables

To allow the relish to mature you need to store the relish for a minimum of 4 weeks.

This Okra relish can be served either hot or cold with meat or fish.
