If you are a Westerner you'll find this Okra in Yoghurt Sauce something different, but once having tried it I'm sure you'll find it most enjoyable
I have to admit it but Indians certainly have a flair when it comes to cooking with Okra
500g [ 1lb 1oz ] okra
3 tblsps sunflower cooking oil
1 tsp cumin seeds
½ tsp onion seeds
2 large onions
2 large tomatoe
2 tsps coriander
1 tsp cumin powder
¾ tsp turmeric powder
½ tsp red chilli powder
3 tblsps yogurt
Salt to taste
Chopped fresh coriander to garnish
To Make The Okra in Yoghurt SauceTop and tail the okra and then cut them into 1?? [2½cm] pieces
Slice the onions and cube the tomatoes
Heat the oil in a deep pan over medium heat and add the cumin and onion seeds.
When they stop spluttering, add the sliced onions.
Fry till the onions are translucent and golden.
Add the coriander, cumin, tumeric and red chili powder and stir well.
Fry for another 2-3 minutes.
Add the okra and mix to ensure that the okra is covered with the spices.
Cook for the okra/spice mixture for 3 to 4 minutes.
Add the tomatoes, yogurt and salt to taste and mix well.
Cook till okra is soft.
Garnish the Okra in Yoghurt Sauce with chopped coriander and serve with hot rolls
