Penne All'Arrabbiata
INGREDIENTS
500g (1lb) penne {or other short tube pasta}
70g (2½oz) butter
1 large onion, finely chopped
220g (8oz) bacon chopped
220g (8oz) button mushrooms finely sliced
3 cloves garlic - chopped
2 small, hot chillies finely chopped
600g (24oz) tomatoes, peeled and chopped (canned will do)
1 small bunch basil roughly chopped
120g (4oz) parmesan cheese

METHODIn large heavy frypan, sauté the bacon and onion.
Add the finely sliced button mushrooms and let them cook for a few minutes.
Add the chopped garlic, the chilli, the tomatoes and the roughly chopped basil leaves. Check for salt and simmer for about 20-25 minutes.
Cook the penne as for spaghetti. Drain and stir through some extra butter and the parmesan cheese.
Serve immediately topped with the sauce and some extra basil leaves or chopped parsley for garnish.
