This is a very easy but very tasty recipe from Swaziland
I have no idea why a pudding named after Queen Mary should have originated in Swaziland
However, it's a really great tasting pudding which is why I had no hesitation including it on Africhef
Pudding Ingredients
½ lb [225g] cake flour
5oz [140g] butter
¾ cup [180ml] milk
¾ cup [180ml] golden syrup
2 eggs [ at room temperature ]
1 tsp [5ml] baking powder
a good pinch of salt
To make the pudding
Beat the eggs in a bowl
Place the flour into a mixing bowl and rub in the butter
Stir in the syrup
Beat in the eggs and milk
Finally mix in the baking powder and salt, making sure they are well distributed throughout the mixture
Place the pudding mixture in a greased oven proof pudding bowl or similar and place this container in a larger pot filled with water 2/3 up the side of the pudding bowl
Steam for 1 hour ensuring that the larger pot does not run out of water
Remove the pudding from the oven and serve immediately with additional golden syrup
Obviously
the Queen Mary Pudding is very sweet and certainly not recommended for anyone trying to lose weight
If you have a sweet tooth you should love this pudding
