I have absolutely no idea why this particular pudding was named "National Pudding".
It certainly is not the most popular or well known of the South African dessert puddings
Ingredients
For the dough
2 cups cake flour
2 eggs at room temperature
2 tbsp apricot jam
2 tsp baking powder
For the Syrup
2 cups sugar
3 cups water
1 tbsp butter
1 tsp vanilla or almond essence
Making the National Pudding
First make the pudding dough
Fold the eggs into the dry ingredients and add a little water to make a dough
Roll out the dough to a thickness of about ¾ inch [ ½ cm ] and spread with the apricot jam
Roll up the dough into a cylinder
Then make the syrup
Place the water in a saucepan and bring to a rolling boil over high heat.
Dissolve the rest of the ingredients in the boiling water to make a syrup.
Remove from the heat.
To make the pudding
Place the rolled cylinder of dough in a long ovenproof dish.
Pour the syrup over the dough
Bake in a preheated oven for one hour at 350
oF [ 175
oC ]
Serve the pudding hot.
