I had to have a pudding recipe from Zimbabwe, so I choose this sweet rice pudding

Be warned... It's not your usual soft and milky pudding

Rice Pudding Ingredients

2 cups milk

1 cup leftover cooked
long grain rice

½ cup white sugar
2 eggs: Large
½ tsp vanilla essence
good pinch salt
Honey or Golden Syrup to serve

Making the Pudding

Preheat oven to 350oF [ 175oC ]

Place the milk in a saucepan and heat, over low heat, until its just warm

Stir in the rice and keep below a simmer for 5 minutes

Remove from heat

In a separate bowl, beat the egg yolks and gradually beat in the sugar and salt.

Gradually add the sugar and egg mixture to the rice, beating continuously.

Whisk the egg whites until they form stiff peaks

Fold into the milk and rice mixture

Add the vanilla essence, stirring well, to mix.

Pour the pudding mixture into a greased ovenproof dish.

Bake for approximately 45-50 minutes until set.

Serve your Zimbabwean Rice Pudding hot with honey or golden syrup
