The addition of All-Bran
breakfast cereal to this Banana Bread recipe
, makes for a healthier bread with a richer taste and spongier texture
It's delicious eaten warm or cold, spread with butter or margarine, at any time of the day
3 large bananas (approx)
2 cups All-Bran cereal
2 cups flour
¾ cup granulated sugar
½ cup butter or shortening
1 tsp baking powder
½ tsp baking soda
½ tsp salt
To Make the All Bran Banana Bread
Preheat oven to 350o
Peel and mash the bananas, you need to end up with 1½ cups.
If you have too little add another banana, too much then don't use all the banana.
Soften the butter/shortening
Break the eggs into a bowl and beat well
Sift together the flour, baking powder, soda and salt.
Combine the All-Bran and mashed bananas in a separate bowl and let this mixture stand for approx 5 minutes.
Cream the butter and sugar together,
Fold in the eggs and then the banana/cereal mixture. Beat well.
Stir in the sifted flour and mix until the flour is evenly distributed through the mixture
Grease a 9X5X3 loaf pan and spoon in the mixture.
Place in the preheated oven and bake the banana bread for 60 minutes.
It is done when a toothpick inserted in the middle comes out clean.
Remove the banana bread from the oven and allow to cool slightly in the loaf tin.
Turn out onto a rack to complete cooling.
Slice and serve the banana bread buttered or with honey.
