Greek Style Pasta Salad

This Greek salad is certainly one of the easiest Pasta Salads

It makes a very refreshing and nutritious light meal which is perfectly suited to those wishing to lose weight

The combination of the pasta and vegetables together with the light dressing makes for a meal with a low glycemic index


500g (1lb) cooked, drained and cooled pasta
{ bow ties, spiralli, shells or similar}
extra virgin olive oil
freshly ground black pepper
¼ cup finely chopped garlic
1 cup sliced pitted Kalamata black olives
1 cup artichoke hearts, chopped
1 cup semi-dried tomatoes, chopped
1 cup crumbled Feta cheese
¼ cup chopped fresh oregano leaves

For the balsamic dressing

1¼ cup extra virgin olive oil
¼ cup balsamic vinegar

To make the pasta salad

Toss cooked pasta in a little oil.

In a large bowl, combine all the other ingredients.

Fold in pasta and chill.

To make the balsamic dressing

Combine the extra virgin olive oil and balsamic vinegar

Add the dressing to the salad and toss

Serve and enjoy
