SOUTH AFRICAN ROOIBOS RECIPES
Rooibos Maize Meal Porridges
[Mealie Pap]

These South African Mealie Pap Recipes from Africhef are an example of the fact that Rooibos Tea may be used in most recipes in place of water or milk.
In fact Rooibos may also be infused in milk in some cases where substituting Rooibos Tea into the recipe would be inappropriate

5 Rooibos Teabags
2 tsp salt
3 cups mealie meal [maize meal]

Cover the saucepan and simmer for 15 minutes

Remove cover and stir maize meal into the water using a cutting motion

You should end up with a stiff porridge which may be served as an starch accompaniment to a meat or poultry dish

Stywepap is also popular at South African Braais and is often served in the place of rice and/or potato. The addition of Rooibos to the recipe for stywepap creates an uniquely flavorsome porridge/starch

In South Africa Stywepap is often served on its own as a meal, with a tomato and onion relish or gravy
