Rooibos Scones with Cranberries

Rooibos can also be infused in milk in many baking recipes

These scones would be delicious with just the cranberries. Adding the Rooibos to the hot milk makes them really special

Rooibos Scone Ingredients

2½ tsp [12.5ml] Rooibos Loose Leaf Tea [Not teabags, you could use them I suppose. but I'm not sure of the conversion]
⅔ cup [160ml] full cream milk [can use low fat 2% milk]
3cups [750ml] flour
4 tsp [20ml] baking powder
½tsp [2.½ml] salt
½tsp [2½ml] baking soda
½ cup [125ml] butter
1 cup dried cranberies
⅓ to ⅔ cup [80-160ml] Sugar

To make the Rooibos scones

Preheat oven to 380oF [200oC

Use a square of cheesecloth to bag the Rooibos Tea eg similar to a bouquet garni

Place the tea together with the milk in a heavy bottomed saucepan and bring to the boil over medium heat. Immediately the milk/rooibos mixture begins to boil remove from the heat and steep for 5-6 minutes.

Sift the flour, baking powder, salt and baking soda ito a mixing bowl

Soften the butter and then cut into the flour. Continue mixing until the butter and flour mixture are fully combined and there are no large lumps.

Put in the cranberries and mix to ensure they are all coated with the mixture, after which mix in the sugar

Place the egg in a medium mixing bowl and whisk slightly.

Add a little of the hot Rooibos infusion to the egg mix and then add the tempered egg to the Rooibos infusion, mixing as you do so

Next, adding the Rooibos infusion slowly, stir it into the flour/cranberry mixture.

When the mixture is fully combine and is of a doughy texture, pace it on a lightly floured board or other smooth surface. Knead 7 to 8 times and then using your hands shape the dough into a 12 inch [30cm] flat square, it doesn't have to be exact.

Cut into 16 squares by dividing each of two adjacent sides into 4 Lightly spray a baking tray with non-stick spray and place the 16 pieces of dough on it.

Bake the rooibos blueberry dough for approximately 25 minutes [check after 20] until the rooibos scones are golden brown.

Let the Rooibos and Cranberry scones cool and then serve.

Although they don't need anything else you could serve with butter and cream.

Please don't add jam as this will spoil the flavor, and I'm sure you'll find the Rooibos scones delicious enough without adding it.

You can ring the changes to this Rooibos recipe by substituting black or golden raisins for the cranberries.
