This Traditional South African Pumpkin and Bread Pudding, universally known as Pampoenmoes in South Africa, will often be found gracing South African dinner tables for dessert
1 lb [450g] pumpkin, peeled and sliced
8 slices of bread, cut thick [¾ inch, 2cm]
2 oz [ 57g ] sugar
2 oz [ 57g ] butter
4 tsp (20ml) ground cinnamon
A little extra butter
To make the pudding
Preheat oven to 300o
Butter both sides of the bread.
Mix together the sugar and cinnamon.
Grease an ovenproof dish.
Place a layer of bread in the dish
Follow this with a layer of sliced pumpkin.
Sprinkle liberally with the cinnamon sugar mixture.
Repeat, with alternating layers of bread and pumpkin, until the bread and pumpkin have been used up.
You must ensure however that you end up with a layer of pumpkin slices on top.
Dot the top layer of pumpkin with the extra butter.
Place in oven and bake until the pumpkin is soft.
Serve the Pumpkin and Bread Pudding hot.
